Lobster Grilled Cheese

Lobster Grilled Cheese. Extra cheesy, nice and buttery, lobster and bacon grilled cheese is everything this summer. It’s august so if you’re craving a grilled cheese make sure you do it up summery and decadent. Serve it with some lobster bisque to dunk alllll that cheesy goodness in !!

The grilled cheese of the summer is here. Yes, we all love grilled cheese and were turning this one into something summery, decadent, and delicious. It’s also lobster season so why not take advantage of all the lobster dishes we can get.

We like using extra thick bread and smothering it with lots of butter so it gets perfectly nice and toasty. Then we cut our lobster meat into chunks and paired it with cheddar cheese and thick-cut bacon. But the key is serving it alongside lobster bisque. This just makes it even more decadent and delicious so why not?! Garnish with flaky sea salt and basil leaves and there you have it.

It’s also finally the weekend for me !! I am super excited because I am taking a half day today and going to the beach. The weather is absolutely gorgeous out, so I am excited to be taking advantage after being stuck inside on the computer all week. And later it’s time for cocktails and more delicious eats alllll weekend long…stay tuned !!


Ingredients

  • 6 slices thick-cut bread

  • 1/4 cup butter; softened

  • 12 slices cheddar cheese

  • 1/2 pound bacon; cooked

  • 2 (1 1/2 pound) whole steamed lobsters; meat removed from shell

  • fresh basil for serving

Directions

  1. Butter one side of each slice of bread. In a large skillet, place the buttered side of the bread down. Top with 2 slices of cheese, 2 slices of bacon, lobster meat, and an additional 2 slices of cheese. Place the remaining slice of bread, buttered side up, on top. Repeat two more times.

  2. Cook over medium high-heat until golden on each side and the cheese has melted.

  3. Slice and serve garnished with fresh basil.
