  • 1/2 pound fresh mozzarella; sliced

  • 4 eggs; beaten

  • salt and pepper

  • 2 1/2 cups breadcrumbs

  • 1/2 - 1 cup olive oil for frying

  1. On a large cutting board, lay out the slices of bread. Top half the slices with the mozzarella and then the remaining half of bread. Press down on the sandwiches. Slice off the crusts.

  2. Sprinkle the eggs with salt and pepper. In another large bowl, add the breadcrumbs. Drip each sandwich in the egg mixture, turning to coat evenly. Dredge through the breadcrumbs and set aside.

  3. Heat the olive oil until very hot. Fry each side of the sandwich until golden for about 1 minute per side. Drain on paper towels.
