Banana Cake with Brown Butter Frosting

Banana Cake with Brown Butter Frosting. Gooey banana cake smothered in brown butter frosting and topped with caramelized bananas in honor of my uncle’s birthday celebration this weekend !! It’s like a butter cake and banana cake combined into one and it’s kind of got a hint of caramel flavor to it…it’s SO good…and it just wouldn’t be a bday celebration without a fun and delicious layer cake !!

You know we can’t do a celebration for a bday or a holiday or just about anything without a good layer cake. And this gooey banana cake is the perfect way to celebrate my uncles birthday/early cinco de mayo. All that perfectly fluffy cake smothered in a brown butter frosting and topped with caramelized bananas. So. So. Good. And best part? It’s actually pretty easy for a layer cake.

I love eating and serving layer cakes….but honestly I hate making them. But this one was super easy I didn’t mind at all. Easy and delicious…always a winning combination. And who doesn’t love banana cake?! Especially one that’s kind of like a cross between a banana bread and a butter cake. All around so so good.

So tomorrow is the big bday/cinco de mayo celebration at the beach. The weather is looking super good for tomorrow too, so I am really excited. We already started prepping a lot of the food for tomorrow and the cake is officially made. Ingredients

  • 3 cups flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 3/4 cup butter; room temperature

  • 1 1/2 cups sugar

  • 2 teaspoons vanilla extract

  • 3 eggs

  • 1 1/2 cups mashed banana

  • 1/3 cup milk

For the Brown Butter Frosting

  • 1 cup butter

  • 4 cups powdered sugar

  • 2 teaspoons vanilla extract

  • 1/4 cup milk

Directions

  1. Preheat the oven to 350 degrees. Grease two 9 inch round cake pans.

  2. In a medium bowl, add the flour, baking powder, and baking soda. Stir to combine.

  3. In a large bowl, add the butter and the sugar. Beat using an electric mixer until fluffy. Beat in the eggs, one at a time, until incorporated. Beat in the vanilla.

  4. In a small bowl, combine the mashed banana and the milk. Alternate folding in the dry ingredients and banana mixture to the batter. Evenly pour the batter into the prepared pans. Transfer to the oven and bake for about 30 - 35 minutes or until a toothpick inserted comes out clean.

  5. Make the frosting. In a small sauce pan, melt the butter. Cook until the butter starts to brown and smell nutty. Transfer to a heat safe measuring cup and let cool to room temperature.

  6. In a large bowl, using an electric mixer, beat the brown butter, powdered sugar, and vanilla. Slowly beat in the milk until the frosting is a proper consistency.

  7. Assemble the cake. Spread an even layer of frosting between each cake. Ice the outside of the cake until smooth.
