Caramelized Fig & Apple Cider Rum

Caramelized Fig & Apple Cider Rum. It’s fall cocktail season and one of my favorite fall cocktails is an apple cider and rum cocktail. But do it up fancy with caramelized figs, thyme, cinnamon sticks, and a splash of ginger beer. It’s fall in every sip. Happy Saturday guys !

I am always here for a good fall rum cocktail. If you’ve never given the rum and apple cider cocktail combo a try, you seriously need to. Especially if you are a rum drinker like me. I usually only do rum in the summertime with some fresh orange juice. The sweetness always goes great with the warm weather. But recently I have been carrying my rum drinks over to the fall.

The dark rum with the apple cider is the perfect combination of sweet yet refreshing. Top it with a splash of ginger beer for some bubbles. Honestly, you could stop there. But why should you? Go the extra distance and caramelize some figs. Use the figs and the jam that forms in the pan in the cocktail, garnish with some thyme and cinnamon sticks. Not only does this cocktail look pretty, but it tastes AMAZING.

It’s the first Saturday of October, so a fun fall cocktail is totally necessary. And we haven’t shared a drink recipe in so long, so I am pretty excited about this one. I am also getting some thanksgiving cocktail vibes from this one. Is it too soon?

Ingredients

  • 3 tablespoons butter

  • 1 pound fresh figs; sliced

  • 1/2 cup brown sugar

  • salt

  • 1/4 cup apple cider

  • 2 ounces dark rum

  • 1 ounce ginger beer

  • thyme and cinnamon sticks for garnish

Directions

  1. In a medium skillet, melt the butter over medium heat. Add the figs and sauté for 2 minutes until they begin to soften. Add the brown sugar and salt. Stir until sugar has melted. Simmer for 3 - 4 minutes or until thickened. Reserve the fig jam.

  2. Assemble the cocktail. Mix the apple cider, rum, ginger beer, and 1 teaspoon of fig jam in a shaker with ice. Pour into a glass and serve garnished with caramelized figs, thyme, and cinnamon sticks.
