Clams Casino Pasta

Clams Casino Pasta. Like clams casino but better because it’s pasta of course. We can’t believe our favorite clams and pasta season is coming to an end. We had so much fun with all the different recipes this summer. Clam Daddys clams made our summer Saturday pasta so so good & we already can’t wait for next summer !!

Well summer officially feels over and done. Labor Day weekend always gives me that feeling. And I am always in my feels when it’s over. Even though summer still has a few more weeks, I am feeling the fall vibes now and I am sad about it.

But since summer is technically not over yet, this will definitely not be our last summer dish. And we will still be going to the beach and hopefully eating more clams and spaghetti. This weekend we had another take on our clams and pasta dish. It seems to have become our Labor Day weekend clams and pasta of choice since we had it last year as well.

It’s almost like clams casino, but since it’s pasta its better. It’s got bacon, tomatoes, parsley, shallots. It’s definitely different that our usual recipe, but it’s also a winner. Next time I think we will add red peppers to give it even more of a clams casino vibe.

Well I hope you all had a good Labor Day weekend and overall a good summer. I am completely in my feelings today…I think outside of January, the week after Labor Day feels like one of the biggest let downs of the year. And I am not going to lie, I am already looking forward to summer 2023 !!


Ingredients

  • 1/4 cup olive oil

  • 1/3 pound bacon; chopped

  • 1 shallot; thinly sliced

  • 1/4 teaspoon red pepper flakes

  • 1 cup white wine

  • 50 little neck clams

  • 1/2 cup chopped parsley

  • 2 cups cherry tomatoes; halved

  • salt and pepper to taste

  • 1 pound linguine

Directions

  1. In a large skillet, heat the olive oil. Add the bacon. Cook until the bacon starts to brown and crisp. Add the shallots and red pepper flakes. Continue to cook another few minutes. Add the wine and reduce a few minutes. Add the clams, parsley, and tomatoes. Cover and cook about 5 - 7 minutes until the clams have opened. Discard any that do not.

  2. Cook the pasta and drain. Add the pasta to the skillet with the clams. Taste and adjust seasonings. Top with additional parsley.
