Caramelized Fig & Honey Walnut Grilled Pizza

Caramelized Fig & Honey Walnut Grilled Pizza. It’s allllll fall today with this fig inspired pizza. There’s mozzarella cheese and blue cheese melted on a crispy grilled crust. Topped with thick-cut applewood bacon, toasted honey walnuts, and my favorite part…the caramelized figs. They created an almost fig jam when you caramelize them in butter and brown sugar so make sure you smother that all over this pizza too !! Happy fall friday guys !!

It’s the first official Friday of fall, and you know what that means…I have to set aside my summer forever mindset for the the first fall pizza Friday of the year. And I'm not going to lie, fall pizzas are actually my favorite. There are just so many delicious sweet and savory combinations. And there are so many fun fall toppings. And they all look super pretty.

I am going to keep grilling these pizzas for as long as I can. If the weather is at least sunny and no rain, I will definitely go out in the cold for a grilled pizza. Today is actually a beautiful day. There really isn’t a cloud in the sky and the temperature is perfect. Not too hot, not too cold. So I had to grill this pizza of course.

Today’s toppings is a mix of caramelized figs, crispy applewood bacon, honey toasted walnuts, and mozzarella and blue cheese. My favorite part about this pizza is the caramelized figs. This is the first time I have ever tried to caramelize my figs before…ok guys, this is game changing. I caramelized them in butter and brown sugar with a little sprinkle of salt. Not only does this make the figs amazing, but it creates a fig jam that you also NEED to save to spread over the pizza.

So, I am absolutely obsessed with this new pizza recipe to say the least. And I am so feeling the fall vibes today with this dinner and amazing weather. You guys can probably guess judging by my fall vibes that it is going to be a city weekend for me rather than a beach weekend. I have a lot of fun plans for this weekend and of course fun food and drink ideas, so stay tuned !!

Happy first weekend of fall guys !!


Ingredients

  • 1 pizza dough; homemade or store-bought

  • 3 tablespoons butter

  • 1 pound fresh figs; sliced

  • 1/2 cup brown sugar

  • salt and pepper

  • 1/3 cup walnuts

  • 1 tablespoon honey

  • 2 tablespoons crumbled blue cheese

  • 4 ounces shredded mozzarella

  • 3 slices thick-cut bacon; cooked and crumbled

Directions:

  1. In a medium skillet, melt the butter over medium heat. Add the figs and sauté for 2 minutes until they begin to soften. Add the brown sugar and salt. Stir until sugar has melted. Simmer for 3 - 4 minutes or until thickened.

  2. On a baking sheet lined with parchment paper, place the walnuts. Drizzle with the honey. Transfer to a 400 degree oven and cook for 6 - 8 minutes or until walnuts are toasted.

  3. Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the mozzarella and blue cheese evenly over the dough. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.

  4. Assemble the pizza. Top with caramelized figs, honey toasted walnuts, and bacon. Sprinkle with pepper and serve.
