Shakshuka Khachapuri

Shakshuka Khachapuri. Pizza Friday done up all breakfast like and in the form of this delicious and cheesy Khachapuri. Loaded with mozzarella, provolone, and feta. Topped with a fresh tomato shakshuka and basil. And of course the egg and butter to make a cheesy bread boat even more decadent. Happy pizza Friday everyone !!

Khachapuri is basically breakfast in the form of one big cheesy bread boat. Even though, to be honest i’ve only ever eaten these for dinner. But tonight we wanted to go all out with the khachapuri breakfast theme and make a shakshuka version of this extra delicious pizza like dish.

A three cheese bread topped with a tomato shakshuka mixture and finished with basil leaves and red pepper flakes. It’s a simple form of khachapuri but its so good. Finally crack the egg over top, add the butter, and give it one big swirl to mix all that cheesy delicious goodness together.

Pizza Friday at the beach…the first one of the spring season. We’re having two Khachapuris and two pizzas. This khachapuri and a broccoli rabe khachapuri…stay tuned for the recipe for that one also ;)) then we are grilling a Cacio e Pepe pizza and a red sauce pizza. And you know pizza night at the shore just isn’t pizza night without my homemade margs. So cheers to another pizza Friday, another beach pizza Friday, and another night of bday celebrations for my dad !!


Ingredients

  • 8 ounces shredded mozzarella

  • 8 ounces feta; crumbled

  • 8 ounces shredded provolone

  • 3 eggs

  • 2 tablespoons olive oil

  • 1/2 yellow onion; chopped

  • 1 garlic clove; minced

  • 4 roma tomatoes; diced

  • salt, pepper, and red pepper flakes

  • 1 pizza dough; homemade or store-bought

  • 2 tablespoons butter

  • fresh basil leaves for serving

Directions

  1. Preheat the oven to 450. Line two baking sheets with parchment paper.

  2. In a large bowl, add the mozzarella, feta, provolone, and 1 egg. Stir to combine.

  3. In a medium skillet, heat the olive oil. When hot, add the onion and garlic. Sauté until softened. Add the tomatoes. Season with salt, pepper, and red pepper flakes. Cook for about 8 - 10 minutes until saucy.

  4. Divide the dough in half. Roll each half into an oval shape about 10 inches long. Transfer the dough to the remaining two baking sheets. Spoon the cheese mixture evenly over the dough. Fold the edges of the dough over the cheese to enclose. Twist both ends of the dough and form a “boat.” Top with the shakshuka mixture. Transfer to the oven and cook for about 10 minutes or until crust is crispy and cheese is melted.

  5. Crack an egg in the center and return to the oven to cook for another 3 - 5 minutes or until the egg white has set. Add the butter. Mix the egg and butter into the cheese. Serve topped with fresh basil.
