Spicy Corn & Tomato Pizza

Spicy Corn & Tomato Pizza. I know we’ve been posting a lot of pizza lately...buttttt it is the holiday weekend and it is pizza and marg friday once again. Tonight we did another crispy grilled pizza topped with Swiss cheese, sweet corn, roasted tomatoes, spicy Calabrian chiles, and basil. A little sweet and spicy? A little tomato basil? The perfect grilling recipe for MDW !!

Happy Memorial Day Weekend everyone. Last night was our kickoff to the weekend. It was a gorgeous night and I really enjoyed being with my family having a little early birthday celebration.

Anyway, tonight is pizza night once again. It is margarita night and grilled pizza night. We have been loving the marg and pizza combo. It’s perfect for a simple night of grilling at the beach. And it’s Memorial Day weekend so that mean you have to grill. Barbecuing is the classic Memorial Day weekend tradition.

Tonight’s pizza is super fun for summer. It’s got the corn and tomatoes…perfect summer veggies, loads of Swiss cheese, those spicy Calabrian chiles, and of course fresh summer basil.

Well time for me to have a marg because it’s a big weekend of celebrations with my birthday being tomorrow !! I will definitely be having more than one ;)) !!


Ingredients

  • 1 pizza dough; homemade or store-bought

  • 2 ears corn kernels

  • 10 ounces cherry tomatoes

  • 6 tablespoons olive oil; divided

  • salt and pepper

  • 7 ounces swiss cheese

  • 6 - 8 whole Calabrian chiles

  • fresh basil for topping

Directions

  1. Preheat the oven to 425 degrees. On a baking sheet, toss the corn with 2 tablespoons of olive oil and salt. On separate baking sheet, toss the tomatoes with 2 tablespoons of olive, salt, and pepper. Transfer to the oven and cook for about 20 - 25 minutes. Remove from oven and set aside

  2. Drizzle the remaining 2 tablespoons of olive oil over the pizza dough. Spread the oiled dough out on a grill pan using your fingertips. Using a fork, pierce holes throughout.

  3. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Layer with the Swiss cheese, corn, tomatoes, and Calabrian chiles. Place back on the grill for another 3 - 5 minutes until cheese has melted. Serve topped with fresh basil leaves.
