Brie, Spinach, Bacon, & Fig Grilled Cheese

Brie, Spinach, Bacon, & Fig Grilled Cheese. This is the ultimate grilled cheese for fall and fig season. Yes we are a little obsessed with figs this month but how could we not be ?! And this grilled cheese may just be our favorite fig recipe yet !!

Well if you can’t tell by all the fig recipes we have been posting, it is officially fig season. And we have been finding the freshest and ripest figs that we just can’t pass up buying. Hence all the fig recipes we have been sharing in the past week. And since we haven’t had them fresh in so long, I am not going to turn down any recipes with figs.

We have been pretty obsessed with all the fig recipes we have been making this week, but this one miiiight just be my favorite so far. The combination of sweet and savory flavors in a crispy, crunchy, cheesy grilled cheese sandwich. The creamy brie, the crispy bacon, the sautéed spinach, the fresh ripe figs. The flavors in this sandwich are seriously just so good.

I have been saying in just about every single post that I am not ready for fall. And while that is certainly true, I cannot lie that I am kind of loving these fall recipes. And it is officially the last day of summer which makes me very sad. But the summer recipes will be continuing for a bit. It’s going to be a mix of summer and fall. And I am sure if you guys are summer lovers like I am you won’t be upset about this !!


Ingredients

  • 4 tablespoons olive oil

  • 1 shallot; sliced

  • salt, pepper, and red pepper flakes

  • 16 ounces spinach

  • 1/4 cup softened butter

  • 4 slices thick-cut bread

  • 1/2 pound brie; sliced

  • 6 slices bacon; cooked

  • 6 ounces figs; halved

Directions

  1. In a large skillet, heat the olive oil. Add the shallot. When the shallots sizzle, add the red pepper flakes, salt, pepper, and spinach. Sauté the spinach until wilted, stirring frequently.

  2. Butter one side of two of the slices of bread. Turn the bread over buttered side down. Layer each slice with the brie, bacon, spinach, and figs. Place the remaining slice of bread over top.

  3. Heat a large skillet over medium-high heat. Add the sandwiches buttered side down. Press down on the sandwich using another skillet. Let brown for about 5 minutes. Butter the other side of the bread and flip. Cook for another 3 minutes. Slice and serve.
