Lobster Rolls

Lobster Rolls. Starting off the weekend with a summer classic…our creamy, herby lobster rolls. The lobster salad is plated on a bed of lettuce and buttery toasty bun. Served with melted butter and fries…does it get much better than this ?!

It’s not officially summer until we have made our favorite…lobster rolls. And since it is the first official weekend of summer we had to kick off the weekend with these delicious creamy and refreshing lobster rolls. We love making lobster rolls all kinds of different ways. But using a refreshing lobster salad as the filler is always our favorite.

The lobster salad is filled with mayonnaise, old bay, lemon juice, celery, and chives. It’s light and fresh and perfect for when it’s hot outside. Then we like to toast up some buns in butter…whether you’re using brioche or not a buttery toasty bun is always key. Finally we serve them with a little melted butter because why not add some extra deliciousness to these decadent rolls, you know?!

I am super excited for the start of this weekend….especially since it is looking like it is going to be beautiful out. And if Friday, Saturday, and Sunday are as nice as they are looking then this is going to be the best weekend weather of the summer yet !!

Tonight I am enjoying a rum and orange juice with these lobster rolls. You guys know that is my all time summer go to. And then this weekend I am doing a fun beach race Saturday morning that ends with free beers and drinks at the beach bar. So yes I am excited to do the run….butttt I will say I am more excited for the beach bar celebration after ;))) happy Thursday guys…hope you all have some exciting weekend plans !!


Ingredients

  • three 1 1/2 pound whole lobsters; steamed

  • 1/4 cup mayonnaise

  • juice of 1 lemon

  • salt and freshly ground pepper

  • 2 stalks celery; finely chopped

  • fresh chives; chopped

  • lettuce leaves for serving

  • 4 brioche hot dog buns

  • 1/4 cup clarified butter

Directions

  1. In a small bowl mix the mayonnaise, juice of half a lemon, salt, and pepper. Set aside

  2. Remove the meat from the lobsters and cut into chunks. Mix the lobster chunks, celery, and chives with the mayonnaise mixture and toss gently. Taste seasoning and add remaining 1/2 of lemon, salt, and pepper if needed.

  3. Assemble the rolls. Place a lettuce leaf onto each bun and mound with the lobster salad. Top with additional chives and drizzle with the clarified butter to serve.
