It’s that time of the month again !! Secret Island Salmon time, and today we are serving up these absolutely gorgeous and delicious firecracker salmon wonton nachos. First of all these are super easy which is perfect for summer because you make a quick yet delicious dinner all while enjoying the beautiful summer weather. So it’s the best of both.

The wonton chips are so delicious with this firecracker sauce. You can totally use regular old tortilla chips too but I highly suggest and recommend buying wonton wrappers and frying those up. They are perfectly light and airy but super crispy and add the right amount of crunch to the dish. The salmon is coated with olive oil, blackened seasoning, and potlatch seasoning. Then it is simply broiled until nice and golden.

Finally it’s all about the sauce and the toppings. The sauce is both sweet and spicy which is a combo I LOVE. Then the toppings and garnishes are pretty much endless but we like to use avocados, Fresno peppers, and chives. Every bite is delicious.

Another week/weekend of beautiful weather at the beach. So I think that this is the perfect time to be enjoying these salmon nachos. They’re also so fun to serve as an appetizer to guests. Plus they’re just really pretty. So whatever the occasion is….just try these. Trust me !!


Ingredients

  • 3 (6 ounces) pieces secret island salmon; skin removed and cut into chunks

  • 2 tablespoons olive oil

  • 1 tablespoon blackened seasoning

  • 1 tablespoon potlatch seasoning

  • 15 wonton wrappers; cut into triangles

  • 1 cup canola oil for frying

  • 1 cup mayonnaise

  • 1/4 cup sriracha

  • 2 tablespoons sweet chili sauce

  • avocado, fresno pepper, and chives for serving

Directions

  1. Drizzle the salmon with olive oil. Sprinkle with the blackened seasoning and potlatch seasoning. Toss to coat. Broil for 3 - 5 minutes or until cooked.

  2. In a large skillet, heat the canola oil. Fry the wonton wrappers until brown and crispy on each side.

  3. In a small bowl, add the mayonnaise, sriracha, and sweet chili sauce. Stir to combine.

  4. Assemble the nachos. Plate the wontons and top with the salmon, avocado, Fresno peppers, and chives. Serve drizzled with the firecracker sauce and sprinkled with black pepper.
