Ok so I know you guys probably think it’s crazy that we are such big cooks and have never used an air fryer before. Well…that just makes us even more excited to be using our brand new Nuwave air fryer. And of course, we are making our favorite summer dish…salmon.

This salmon is healthy, light, refreshing, and of course delicious. It’s marinated in a simple combo of olive oil, salt, and pepper. Then air fried until golden and crispy on the outside but juicy on the inside. Then we topped it with a simple olive and burst tomato salsa for the perfect touch of summer color and flavor. Garnish with a little basil and it is just that simple.

It has been so relaxing being at the beach all week for far. I feel like I just never want to leave. But I am also so excited for all the plans that are coming for 4th of July weekend. We are only a few days away until all the festivities start and you already know we have quite a menu lined up for the weekend. But for now were starting a little early with this salmon and some wine on the deck. Happy wine Wednesday !!


Ingredients

  • 3 (6 ounce) secret island salmon filets

  • 2 tablespoons olive oil

  • salt and pepper

  • 3 tablespoons butter

  • 10 ounces cherry tomatoes

  • 1/2 cup roughly chopped castelvetrano olives

  • fresh basil and thyme

Directions

  1. Rub the salmon with the olive oil. Season with salt and pepper. Transfer to an air fryer and cook on 400 degrees for 8 - 10 minutes and temperature reaches 145 degrees.

  2. Make the olive salsa. In a medium skillet, melt the butter. Add the tomatoes and season with salt and pepper. Cook over medium-high heat until tomatoes begin to burst. Add the olives, basil, and thyme. Cook for another 3 - 4 minutes.

  3. Serve salmon topped with olive salsa and garnished with additional fresh basil.
