Bang Bang Salmon Wonton Nachos

Bang Bang Salmon Wonton Nachos. These bang bang salmon bites are one of our favorite recipes. But when you add them on top of wonton nachos and serve them with avocado and chives they are even more elevated and so addicting. And of course with this super dreary weather, summer recipes always cheer us up !!

This was a recipe I started making in the winter when I was at the shore for a galantines day weekend. I did not make the nachos, but the bang bang salmon bites were so good I continued to make this recipe throughout the year. But over the summer I had the idea of using the bang bang salmon bites over wonton nachos…definitely did not disappoint.

The dreary weather this weekend had me a bit depressed and reminiscing on summer days. Especially summer weekends with fun and delicious recipes like this one. I remember eating this dinner one Friday night when my cousin visited. The weather was absolutely gorgeous that weekend and this dinner was the perfect way to end Friday night.

The crispy wonton chips topped with the golden fried bang bang salmon. Finished with pretty much any toppings you can think of. We kept it pretty simple this night and went with avocado and chives. But the flavors in this dish are so good and the perfect reminder that you can still have summer eats in the fall.

The forecast is looking pretty down for the next few days, but next weekend is supposed to be beautiful and we are planning to go to the beach. I am hoping for a few more beach days or even backyard tanning days just to feel the warmth of the sun. And of course finishing each day with a summery dish. We are going to try to order clams for clams and spaghetti. Bringing back our favorite tradition, so stay tuned !!


Ingredients

  • 1 pound salmon; skin removed and cut into chunks

  • 2 cups buttermilk

  • 4 tablespoons potlatch seasoning; divided

  • 2 cups flour

  • 1 cup cornmeal

  • 2 cups canola oil for frying; divided

  • 15 wonton wrappers; cut into triangles

  • 1 cup mayonnaise

  • 1/4 cup sriracha

  • 1/4 cup sweet chili sauce

  • 1 teaspoon soy sauce

  • avocado and chives for serving

Directions

  1. In large bowl, add the buttermilk and 2 tablespoons of potlatch seasoning. Add the salmon and let marinate for 30 minutes.

  2. In another large bowl, add the flour, cornmeal, and remaining 2 tablespoons of potlatch. Toss to combine. Coat the salmon in the flour and corneal mixture.

  3. In a large skillet, heat 1 cup of canola oil. Fry the salmon bites until crispy and golden.

  4. In another large skillet, heat the remaining 1 cup of canola oil. Fry the wonton wrappers until brown and crispy on each side.

  5. In a small bowl, add the mayonnaise, sriracha, sweet chili sauce, and soy sauce. Stir to combine. Toss the salmon bites in the spicy mayo sauce.

  6. Assemble the nachos. Plate the wontons and top with the bang bang salmon bites, avocado, and chives.
