Strawberry Cheesecake Cookies

Strawberry Cheesecake Cookies. Is it valentines weekend without an overload of festive desserts?! The answer is no. So we have the perfect cookie that you’ll be so addicted to and is perfect for vday cellies. Filled with fresh strawberries soaked in lemon juice and a big chunk of cream cheese filling in the middle to make these little bite sized goodies taste just like strawberry cheesecake. Happy valentines weekend !!

Always need a little something sweet for valentines weekend….ok maybe a few sweets for valentines day. And we have a whole weekend of valentines day eats coming your way. And these cookies are the perfect little bites to help celebrate the weekend.

Tonight we are having dinner with my uncles family. We’re having a surf and turf dinner…steak and stone crabs. And stone crabs are my absolute favorite so you already know I am super excited. But you need something sweet to go with this dinner. So we’re having strawberry martinis and these delicious strawberry cheesecake cookies.

These cookies are actually kind of giant. So they aren’t exactly bite sized, but has anyone ever complained about a cookie being too big?! I don’t think so. Filled with fresh strawberries that are soaked in lemon juice and sugar. And the centers are filled with cream cheese so you get that delicious strawberry cheesecake flavor. And they are SO good.

Ingredients

  • 1 cup fresh strawberries; chopped

  • 1 tablespoon lemon juice

  • 1/2 cup + 1 tablespoon sugar

  • 2 cups flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup butter; room temperature

  • 1/4 cup brown sugar

  • 1 egg

  • 1 teaspoon vanilla

For the Cream Cheese Filling

  • 4 ounces cream cheese; room temperature

  • 3 tablespoons powdered sugar

  • zest of 1 lemon

Directions

  1. In a small bowl, add the strawberries, lemon juice, and 1 tablespoon of sugar. Toss to combine. Let soak for 10 minutes and drain.

  2. In a medium bowl, add the flour, baking powder, and salt. Stir to combine.

  3. In a large bowl, add the butter, remaining 1/2 cup sugar, and brown sugar. Using an electric mixer, beat until fluffy. Add the egg and vanilla and beat to combine. Stir in the dry ingredients until combined. Carefully fold in the strawberries.

  4. In another small bowl, combine the cream cheese, powdered sugar, and lemon zest.

  5. On a baking sheeting lined with parchment paper, scoop heaping tablespoons of batter. Flatten into a pancake and top with a dollop of the cream cheese mixture. Cover the cream cheese with additional batter. Should yield about 12 cookies.

  6. Transfer to a 350 degree oven and bake for approximately 18 - 20 minutes.
