Maple Pumpkin Soup
Ingredients
For the Soup
1/2 cup maple syrup
1 cinnamon stick
2 (15 ounce) cans pumpkin puree
2 1/2 cups vegetable broth
1 tablespoon fresh thyme leaves
1/4 teaspoon cayenne
salt and pepper
2 tablespoons bourbon
1/2 cup heavy cream
For the Breadcrumbs
1/2 pound bacon; chopped
20 sage leaves
1/2 cup chopped pecans
1 cup panko breadcrumbs
Directions
In a large pot, add the maple syrup and the cinnamon stick. Bring to a boil then reduce to a simmer for 5 - 10 minutes or until maple syrup has thickened. Stir in the pumpkin puree. Add the vegetable broth, thyme, and cayenne. Season with salt and pepper. Cook over medium-low heat for about 10 minutes or until warmed through. Add the bourbon and the heavy cream. Cook for 5 more minutes. Discard the cinnamon stick.
In a large skillet, add the bacon. Fry until crispy. Add the sage leave and cook for 2-3 minutes. Add the pecans and stir to combine. Add the panko and stir until toasted.
Serve soup topped with breadcrumbs.
