Avocado Pasta
We have always been a huge fan of avocados and will basically put them on just about anything! Toasts, salads, eggs, pizza, you name it. So we decided an avocado pasta dish would be perfect! This dish is pretty simple using avocado mixed with olive oil and parmesan to create a creamy puree for the sauce.
If you are a fan of avocados you are sure to love this pasta! While this dish is good no matter what time of year, we think it is a fun one for the summer, and depending on whether or not you enjoy a spicy kick to your food we recommend sprinkling it with chili pepper flakes! We have been adding chili flakes to just about every pasta recipe lately in generous amounts! However, the chili flakes can be added at the end, so you can enjoy this pasta with or without them! a. Ingredients:
½ lb of linguine or fettuccine
2 large, ripe avocados
¼ cup of extra virgin olive oil
1 lemon; juiced
½ cup of grated parmesan
Salt and black pepper to taste
Chili pepper flakes; optional
b. Directions:
Cook the pasta in a large pot of salted water until al dente
Save 1 cup of pasta water
In a food processor puree the avocado, olive oil, and parmesan until smooth
Remove to a large bowl, add salt and pepper, and set aside
Add the pasta water, a ¼ of a cup at a time until there is a thinner consistency
Combine the pasta and the sauce; sprinkle with chili pepper flakes and garnish with parsley
