Pasta with Tomato, Basil, & Brie
This recipe reminds me so much of growing up. Throughout my childhood I shared a birthday with my MomMom who was also an amazing Italian cook. My Mom learned from my MomMom, so traditions have been getting passed down for a while!
Nonetheless, on our shared birthday my Mom would make each of us our favorite pasta dish. As a child I always picked Carbonara because I loved bacon so much, and my MomMom always picked Pasta with Tomato, Basil, and Brie. I remember how much I loved sharing my birthday with her growing up! My MomMom also had a twin sister, so you can image how festive it was sharing a May birthday with both of them!
After my MomMom passed away when I was a bit older, I started asking for her favorite pasta on my birthday which was the tomato, basil, and brie recipe! We still carry on this tradition of making this pasta on my birthday every year, and it has truly become a staple dish in our house. Every year it reminds me of the birthdays I got to share with my MomMom growing up, and I am forever grateful to have those memories. She was always such an influential cook in our family, and her dishes and traditions still live on in our house!
This pasta dish is super simple to make, and always pleases everyone! The creamy brie with the tomato and basil is a perfect combination. We promise it is a dish you will want the make every week!
a. Ingredients:
1 pound of linguine
1 cup of extra virgin olive oil
6 Roma tomatoes; chopped
1 cup of fresh basil; sliced
½ pound of brie; cut into chunks and rind removed
Salt and pepper to taste
b. Directions:
In a large bowl place the tomatoes, basil, brie, olive oil, salt, and pepper; let this sit for at least an hour
Boil a large pot of salted water; cook the linguine according to package directions; save 1 cup of pasta water
Add the pasta to the brie mixture and add the pasta water as needed
