Cowboy Barbecue Chicken Salad

Cowboy Barbecue Chicken Salad

In the summer we always love to do chicken recipes on the grill, so this one is just perfect especially for a BBQ! For this recipe we use skinless chicken thighs and sear them on the grill turning once. Then we drizzle the barbecue sauce on the chicken and place it on a large enough piece of heavy duty foil, lower the grill heat, and let them cook with the lid closed for approximately 20-25 minutes.

Honestly, this chicken is good enough to serve on its own adding as much barbecue sauce as you please! We like to save some sauce for any extra dipping! However, we recently came up with the idea to add this delicious chicken recipe to a salad, and we were very happy with how it came out! We arranged our barbecue chicken on top of a spring mix with cherry tomatoes, sliced avocado, cucumber, walnuts, and applewood smoked bacon. Like I said, this chicken is great on its own so if you prefer a salad on the side, it is totally up to you! However, if you are feeling a little adventurous and want to give our Cowboy Barbecue Chicken Salad a shot, we promise it will not disappoint!


a.     Ingredients for Barbecue Chicken:

  • 8 skinless chicken thighs

  • 1 small bottle of barbecue sauce

b.     Ingredients for the Salads:

  • 10 oz of cherry tomatoes

  • 1 avocado; sliced

  • 1 large cucumber; sliced

  • ½ pound of Applewood smoked bacon; cooked

  • ½ cup of walnuts

  • 10 oz of spring mix

  • ½ cup of olive oil

  • ¼ cup of vinegar of your choice (we like red wine shallot vinegar)


c.     Directions:

  1. Sear chicken breasts on a grill on high heat turning once

  2. Cover the chicken in the barbecue sauce and place it on a large enough piece of heavy duty foil to hold and cover the chicken

  3. Lower the grill to low heat; place the foil covered chicken on the grill and close the lid to cook for 20-25 minutes

  4. Meanwhile arrange your salad on a board with the spring mix, tomatoes, avocado, cucumber, bacon, and walnuts then drizzle with the olive oil and vinegar of choice; then add the barbecue chicken to the top
