Very Berry Summer Salad

Earlier in May, my Mom and I went to Sur la Table to buy some kitchen supplies and went a little crazy when we got there and saw all the cute summer dish-ware they had gotten in! The bowl that this salad is in was one of the things we saw and had to have! We also got the matching serving spoon and fork and the matching cups! The berry printed bowl is so perfect for summer especially for some entertaining. We have found that salads go perfectly in this bowl!

Later that day, we found tons of berries in our fridge and thought it would be the perfect time to put together a summer berry salad after just having bought this new bowl! We pretty much threw this one together with ingredients we had on hand, and it has since become a staple summer salad in our house. You can use any fresh berries you have on hand for this one, but we used a mix of strawberries, blackberries, and blueberries! We had some leftover Applewood smoked bacon to fry up from our Sunday brunch the day before so we added that as well. Then we decided to throw in some cherry tomatoes, avocado, walnuts, and crumbled blue cheese! Lastly we made a vinaigrette with olive oil and raspberry vinegar to drizzle over top, and the combination of ingredients with the dressing was to die for!

If you have never tried Grapefruit Rose, we highly recommend it to pair with this salad! It is a sweeter Rose and just tastes delicious with this sweet salad!


a.     Ingredients:

  • 10 oz of spring mix

  • ½ cup of strawberries

  • ½ cup of blackberries

  • ½ cup of blueberries

  • 10 oz of cherry tomatoes

  • 4 oz of crumbled blue cheese

  • ½ pound of cooked and crumbled Applewood smoked bacon

  • 1 avocado; sliced

  • 1 cup of walnuts

  • ½ cup of olive oil

  • ¼ cup of raspberry balsamic vinegar

  • Salt and pepper to taste


b.     Directions:

  1. Place spring mix in a large bowl; then arrange strawberries, blueberries, blackberries, cherry tomatoes, bacon, avocado, and walnuts in sections on top of mix

  2. Spread the crumbled blue cheese on top of salad

  3. Mix together the olive oil and raspberry balsamic vinegar in shaker with salt and pepper

  4. Drizzle the vinaigrette on top and toss the salad
