Tomato Spinach Boursin Orzo Chicken

Ingredients

  • 1 pound chicken cutlets

  • 2-3 tablespoons olive oil

  • Salt, pepper and paprika

  • 4 tablespoons butter

  • 1 shallot chopped

  • 10 oz cherry tomatoes

  • 1 cup orzo

  • 2-3 cups chicken broth

  • 1 cup heavy cream

  • 1 boursin cheese (we used shallot and chive)

  • 2 cups fresh spinach

Directions

  1. Rub the chicken with 1 tablespoon of olive oil, salt, pepper and paprika.

  2. Heat remaining oil in a large skillet and sear the chicken on both sides until golden and cooked through set aside. Add the butter and shallots to the skillet and when the shallots sizzle add the tomatoes and orzo. Stir it for a minute or two and add 1 1/2 cups of broth. Cook over medium heat stirring frequently until the orzo is tender. Add more broth as needed.

  3. Stir in the cream and add the Boursin, stirring until melted and incorporated. Add the spinach and cook until wilted. Return the chicken back to the skillet to heat through.
