Lentil & Escarole Soup

Lentil & Escarole Soup. It’s super snowy and it’s the first Monday of the new year so we need a cozy good luck soup. Emphasis on the good luck part after the crazy start to this year ;)) this one is a tradition for us in the new year and it’s super hearty and cozy and just one of those warm your bones bowls. Happy start to the new year guys…hope you all had a good one !!

If you don’t consider today one of the scariest days of the year…then I don’t know what is. The first Monday back to work after the holidays is always a depressing one. And it definitely doesn't help when you get a cold gloomy snowstorm on top of it. So obvious today we needed to make soup. And a good luck soup at that.

Having lentils to start the new year is one of our traditions, and our favorite way to make them is in a cozy bowl of soup. So to kick off the first week of the new year we are having our good luck lentils in this hearty bowl of goodness. And aside from the fact that this soup is so delicious….we can definitely use all the luck we can get considering the crazy start we have already had to this year.

Anyway, I am so happy the first Monday back to work is over. It felt like such a long day, but luckily I work from home so I spent the whole day working in bed ;)) !! Cheers to the new year everyone !!


Ingredients

  • 2 tablespoons butter

  • 1 small onion; chopped

  • 1 stalk celery; chopped

  • 2 carrots; chopped

  • 1 garlic clove; chopped

  • 1 (16 ounce) bag green lentils; rinsed

  • 1 (14 ounce) can diced fire roasted tomatoes

  • 2 (46 ounce) cans chicken stock

  • 2 heads escarole; chopped

  • salt and pepper to taste

  • olive oil for drizzling

Directions

  1. Melt the butter in large stock pot. Add the onion, celery, carrot, and garlic. Sauté for about 5 minutes. Add the lentils and stir to combine. Add the tomatoes and the stock. Bring to a boil. Reduce heat and simmer 20 - 25 minutes until lentils are tender.

  2. Add the escarole and bring back to a boil. Turn off heat then cover and let sit for 10 minutes. The escarole should be cooked. Season with salt and pepper. Serve drizzled with olive oil.
