Spicy Chipotle Pumpkin Hummus

Spicy Chipotle Pumpkin Hummus. Halloween appetizers ?! Pumpkin hummus needs to be your go to and this one is the perfect combination of both sweet and savory. Filled with cinnamon, Chipotle chili powder, cayenne, honey, and Chipotle peppers in adobo. Topped with pistachios and drizzled with olive oil. Paired with lots of crackers for dipping…you guys it’s definitely different but totally delicious !! Happy Saturday everyone !!

All about the fall appetizers this weekend. Tonight we’re being festive with this pumpkin hummus. It’s super different than any other hummus I have tasted before, but it is actually really good. It’s the perfect addition to any fall cheese or antipasto board, and it’s great with crunchy crackers for all that dipping and dunking.

The hummus has a strong pumpkin flavor, but it is also spicy which gives it that extra kick that you need. So it ends up being the perfect combination of both sweet and spicy flavors. So you’ve got the classic chickpeas, the sweet pumpkin, the chipotle peppers in adobo mixed with both sweet and savory spices, and finally the pistachios on top to tie it all together.

I have been wanting to give pumpkin hummus a try all fall and today just seemed like a good day to do it. It’s Halloween weekend and tonight I am having dinner in the city with some friends. We are going to do a wine and cheese happy hour on the rooftop, so I am brining some goodies including this pumpkin hummus. The weather is perfect for a little fall outdoor happy hour before we go to the bars. It’s not too cold yet, but there is the perfect fall chill in the air for sweatpants and sweatshirts with wine and cheese !!

Ingredients

  • 1 (15 ounce) can chickpeas; drained and rinsed

  • 1 (15 ounce) can pumpkin puree

  • 2 tablespoons olive oil

  • salt and pepper

  • 2 finely chopped chipotle chilies in adobo + 1 tablespoon adobo sauce

  • 1 tablespoon honey

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon cayenne pepper

  • 1/2 teaspoon cumin

  • 1 teaspoon chipotle chili powder

  • 1/4 cup pistachios

  • crackers for serving

Directions

  1. In the bowl of a food processor, add the chickpeas, pumpkin hummus, and olive oil. Season with salt and pepper. Puree until smooth.

  2. In a small bowl, add the chopped chipotle chilies, adobo sauce, honey, cinnamon, cayenne, cumin, and chipotle chili powder. Season with salt and pepper. Stir to combine. Add half the chipotle chili mixture to the pumpkin hummus and stir to combine.

  3. Serve hummus topped with remaining chipotle chili mixture, additional olive oil, and pistachios. Serve with crackers.
