Chipotle Quinoa Lentil Tacos

Chipotle Quinoa Lentil Tacos. The holidays are over, so you know what month it is...healthy January. Success Rice quinoa is a delicious and nutritious protein option to ring in a healthy new year. It's super simple to make, but the options of what to make are endless. These tacos are better tasting and better for you…plus they are super fun and delicious. Healthy eating made easy !!

We make tacos pretty often…so we are always looking for new fun and unique ways to make them. So new year, new taco? Am I right?! And these tacos are both fun and delicious AND healthy. Plus the lentils for good luck…because like I said, we need all the luck we can get in this house with the crazy start to 2022 that we have been having.

The lentil and quinoa mixture is a the perfect blend of spicy and tangy. Mixed with black beans, paired with sliced avocado, and drizzled with a saucy Lime Crema. The quinoa packs the heat, but the Crema provides the perfect cool down.

So this is our official first taco Tuesday of 2022. Don’t worry i’m sure there will be plenty more to come. And with plenty more unique taco ideas for a brand new year !!


Ingredients

  • 2 tablespoons olive oil

  • 1 red onion; diced

  • 1 bag success quinoa; cooked

  • 1 cup lentils; cooked

  • 1 (14 ounce) can black beans

  • 1 tablespoon chipotle chili powder

  • 1 tablespoon cumin

  • 1 teaspoon smoked paprika

  • salt and pepper

  • juice of 2 limes; divided

  • 1/4 cup cilantro; chopped

  • 1 cup sour cream

  • 1 avocado; sliced

  • 6 - 8 corn tortillas; charred

Direction

  1. In a large skillet, heat the olive oil. Add the onion and cook for 3 - 4 minutes. Add the quinoa, lentils, black beans, chipotle chili powder, cumin, and paprika. Toss to combine. Cook for another 2 - 3 minutes. Adjust seasonings, adding salt and pepper. Remove from heat and stir in the juice of 1 lime and cilantro.

  2. Make the Lime Crema. In a small bowl, combine the sour cream, juice of remaining lime, and pepper.

  3. Assemble the tacos. Layer the tortillas with the quinoa and lentil mixture. Drizzle with lime crema and serve.
