Flounder Francaise
Ingredients
4-5 flounder fillets about 1- 1 1/2 lbs
1/2 cup flour
1 teaspoon salt
2 eggs
Chopped parsley
Black pepper
1/4 cup butter + 2 tablespoons divided
2 tablespoons olive oil
1 cup white wine
1 cup chicken broth
1 lemon juiced
Directions
Season the flour with salt and coat the flounder in the seasoned flour. In a shallow bowl beat the eggs with parsley and black pepper. Dip the lobster in the egg batter.
Meanwhile heat 4 tablespoons butter along with the olive oil in a skillet. When the butter sizzles add the flounder and cook 2-3 minutes per side until puffed and golden.
Remove the flounder, place on a baking sheet and transfer to 350 degree oven to keep warm while making the sauce.
Add the wine, chicken broth and lemon juice to the skillet. Let it boil and reduce by half. Add the remaining butter and more chopped parsley.
Remove the fish from the oven and pour the sauce each fillet.
