Warm Blue Cheese & Bacon Brussels Sprouts

Warm Blue Cheese & Bacon Brussels Sprouts. If you’ve never had crispy Brussels sprouts with melted blue cheese, you absolutely need these in your life and need to add them to your thanksgiving menu. Paired with crispy bacon and pomegranate arils…you guys these are definitely the best roasted Brussels sprouts you will ever have. And yet again, another side dish to add to your thanksgiving table !! Happy Thursday !!

You guys probably know by now that I love thanksgiving sides. But if there’s one other thing you know about me…it is that I have an extreme love for Brussels sprouts. I am talking, I could eat them anytime, anywhere, prepared anyway. And if I am out to dinner and they are on the menu, they are 100% being order.

So, yes, I love thanksgiving side dishes. But my absolute favorite side dish of them all is Brussels sprouts. And this year we have a brand new Brussels sprouts dish for you guys to try. This one is super delicious, super festive, and super addicting. Like if you pass me the bowl, I may not be giving it back.

Brussels sprouts and blue cheese are a delicious combo. But have you ever tried them with melt blue cheese? And crispy bacon? AND pomegranate arils? These are melt in your mouth delicious and I am hands down obsessed. And the key is letting the blue cheese get a little crispy when it melts so you get these perfectly delicious blue cheese crisps.

Another day, another side dish. And another day closer to my favorite holiday of all time !! Hope you guys like this recipe as much as I do !! Cheers !!


Ingredients

  • 1 pound of Brussels sprouts; halved

  • 3 - 4 slices of thick cut applewood bacon; chopped

  • 2 - 3 tablespoons of olive oil

  • salt and pepper

  • 4 ounces of crumbled blue cheese

  • 1 cup of Pomegrante arils

Directions

  1. On a baking sheet lined with parchment paper, add the Brussels sprouts and bacon. Toss with the olive oil. Sprinkle with salt and pepper. Transfer to a 425 degree oven and roast for 20 - 25 minutes or until crispy.

  2. Remove the Brussels sprouts and bacon from the oven and place them in a baking dish. Top with blue cheese and place under the broiler for an additional 2 - 3 minutes or until blue cheese is melted. Serve topped with pomegranate arils.
